3 sun dried tomatoes
300g courgettes
100ml warm water
olive oil
1 small onion sliced
1 garlic clove finley chopped

1 Slice the sun dried tomatoes into thin strips. Place in a bowl with the warm water. Allow to stand for 20 mins

2 Heat oil in large frying pan, add onion and cook over low to medium heat, stiring until it has softened and turned translucent,

3 Stir in garlic and courgettes. Cook for about a further five muinites, continuing to stir

4)Stir in tomatoes in soaking liquid, cook untill courgettes are just tender.

250g tomatoes
2 medium chillies finely chopped
½ teaspoon dried basil
3 tablespoon chopped coriander
I small onion
I garlic clove
100ml limejuice

Stick in blender, mix till desired consistency.


This was awesome, perfect for me. Only need half that amount for one person though. If I was serving it to other people I would stick some tomato puree in to make it redder. Went well with the courgette sticks. Could do with being accompanied by sour cream though.

Oven Baked Courgette strips
Ingredients
3 medium courgettes, 45g whole wheat breadcrumbs 35g c grated parmesan cheese, 1 tsp. dried oregano 1/2 tsp. garlic powder, 1 tbsp. olive oil.

Directions
1. Preheat oven to 190
2. Spray large baking sheet with oil cooking spray.
3. Cut zucchini length wise ( 1 1/2 in thick)
4. Toss courgette in a bowl with the olive oil.
5. Mix dry ingredients in a plastic bag.
6. Place courgette in plastic bag and shake to coat.
7. Bake 20 min.
8. Turn zucchini, bake another 10-15 mins. or until golden
brown.


Number of Servings: 4

These were really nice but would have worked better if I'd peeled the courgettes I think, (I can chuck the peel in the stock pot collection. Also toying with the idea of mixing honey with the oil to make coating stick better.

Ingredients


110g (4 oz) butter
1 skinless, boneless chicken breast fillets
4 tablespoons lemon juice
40g (1 oz) grated Parmesan cheese

Preparation method
1. Melt 1/4 of the butter in a medium frying pan over medium high heat.
2. Add chicken to frying pan and brown for 5 to 7 minutes, turning occasionally. When chicken is browned, add remaining butter and lemon juice (if desired, add extra lemon juice to taste).
3. Sauté for 6 minutes over medium heat, then remove chicken from frying pan. Add cheese to frying pan, stir all together until mixture has reached the consistency of a sauce, then pour the sauce over the chicken and serve hot.

Well the Chicken Cooked perfectly and was delicious. However the rest not so good. It never really turned into sauce, (maybe I was using the wrong kind of cheese?-pre grated Italian hard cheese in a tub- couldn't get any actual Parmesan) it was just cheese swimming in oil. I thought when I got the recipe ingredients together that that was a hell of a lot of butter. Next time I think I will just cook he chicken in butter and lemon juice

Today I made


Cheese and cranberry salad

  • 100g of Goats cheese

  • 1 ripe pear

  • oil,for brushing

  • handful of broken pecan nuts

  • 80g of spinach


  • For the dressing
  • 1 tbsp cranberry sauce

  • 1 tbsp olive oil

  • 1 tbsp of lemon juice




1) Preheat the grill to high ana line the grill rack with foil. Halve the cheese to make two disks. Halve and core the pear, cut each half into slices and arrange in two piles on the file. Lightly brush the pears with oil then top each pile with a cheese disc (cut side up) and grill for a few minutes until lightly golden and bubbling. Scatter with the nuts and grill for a minute or so more.

2)For the dressing whisk the cranberry sauce with the oil and lemon juice

3)Arrange salad leaves on plates put the pears and cheese on top spoon over the dressing, scatter over any stray nuts and eat straight away while the cheese is still runny.


It was amazingly delicious. lovely combination of flavours. I am a big spinach fan anyway but spinach and goats cheese is divine!
